  2. reduce the wine to almost no liquid is left before adding stock and put it into the oven. better color and more depth in taste

  3. When making gremolata or any recipe that uses lemon or orange peel, please use organic fruit that hasn’t been coated in chemicals. Most conventional lemons and oranges are treated with pesticides, fungicides, and other crap you really don’t want in your food
