2.5 gr Dry Yeast
668 gr Bread Flour
668 ml Filtered Water
Combine let it set on the counter for an hour and then refridgerate over night
Next Day finish the dough:

21 gr Sea Salt
10 gr Sugar
add flour slowly mix on a medium speed until the sides of the mixer are clean(around 10-15 minutes).
340 gr bread flour
