Meatball Sub

Ingredients:
For the Meatballs:
¼ lb ground chicken
½ tbsp olive oil
1 clove garlic, minced
¼ cup onion, minced
2 tbsp Parmesan, shredded
2 tbsp bread crumbs (I used gluten-free)
1 tsp Italian seasoning
¼ tsp salt
¼ tsp black pepper
½ egg

For the Marinara Sauce:
1 tbsp olive oil
1 clove garlic
¼ cup onion, minced
7 oz canned whole tomatoes
½ tsp red chili flakes
⅛ tsp Italian seasoning
⅛ tsp dried oregano
⅛ tsp dried basil
⅛ tsp dried parsley
White wine?
¼ tsp salt, or to taste
¼ tsp black pepper, or to taste

Directions:
For the Meatballs: Preheat the oven to 400 F
In a pan over medium heat, warm the olive oil, then add the onions and garlic and cook until golden brown and fragrant, around 4-5 minutes
In a bowl, combine the chicken, garlic, onion, Parmesan, bread crumbs, Italian seasoning, salt, black pepper, and egg
Portion out into tablespoon-sized balls onto a baking paper-lined baking sheet
Bake for 15-20 minutes, until golden brown and the inside of each is at least 165 F
For the Marinara Sauce: In a pan over medium heat, warm the olive oil, then add the onions and garlic and cook until golden brown and fragrant, around 4-5 minutes
Add in the canned tomatoes, chili flakes, Italian seasoning, oregano, basil, parsley, white wine, salt, and black pepper
Break apart with a spatula and cook until simmering and thickened, around 10 minutes
Add in the meatballs, mix, and remove from the heat
Place 3-4 meatballs and some of the sauce in a toasted sandwich roll and serve

  3. Meatballs are not "an American invention". Most foods exist in one form or another in different places. Meat balls have existed in Europe for a very long time. In Sweden it has existed since the middle of the 1600 hundreds.

  5. I would love to see one of the staples in my hometown: chicken perloo. It's a southern rendition of pulao/pilaf that originated in the gullah cultures of the sea islands, and it's absolutely wonderful! Other great dishes: Charleston shrimp and grits, Hoppin' john, Jambalaya, cornbread, Johnny cakes, buffalo chicken, Southern barbeque, chili, collard sandwich, tortilla soup, wild rice soups, gumbo. Honestly the list is endless.
