Ethan, it would be great to learn which variety is healthier from the standpoint of whether they are GMO and whether manufacturers use pesticides to grow them. I have never seen organic russet potatoes, but often organic gold ones in the US.

The Irish Potato Famine was caused by Britain colonising Ireland, stealing and exporting all of their valuable crops and produce, and forcing the Catholic Irish workers to subsist on almost exclusively potatos. Throughout the famine, Ireland was a large producer of foodstuffs, most of which was taken by the Brits and shipped under military force to England.
Here in CANADA, and specifically in the Province of Prince Edward Island, we have far more variety of potatoes available between May to November.
In Finland when you're choosing potatoes in the grocery store, the bags on potatoes have information to let you know what they're best suited for. I just look at that information.

Usually I enjoy these deep dives because they have some new to me information or because I hadn't thought of it that way. This one though? I hadn't realized nearly how differently you taste things! You didn't mention the astringency I always perceive from every preparation of red potatoes, or the mild buttery umami from the Yukon Gold! Russet are a more dry and mealy blanker slate on which to work.
