I very much like your videos… but ont this on I really Thank you for the effort done on the correct pronounciation of M. ESCOFFIER's name the french way.
Last year I took a train from London to Bath. It was a Belmond train who operates the Orient Express now. I ordered the lamb but felt weird eating it as we rode past fields with baby lambs playing. Lol but the experience was wonderful and certainly worth the hefty price tag. Also the skill of the servers pouring hot soup as one of our courses on a rocking train!
The final orient express was just an average train passing several countries starting from Paris, nothing of the original OE was left. I rode it many times, because I live on the route and it was a common train to take if I wanted to go to Vienna which was close by! And yes it was disbanded I think around 2009, it does not run anymore, but it had nothing in common with the original experience you had anyway!

those are some humongous duchess potatoes. They are usually way, way smaller. Like 1/5 the size.
I like my lamb chops medium rare, I would never cook them through like that. But that does look delicious.

Lamb chops are not meant to be cooked all the way through. Best prepare them as a whole rack and cut after resting. Everything else is barbaric.
