if u heat up the pan with the guanciale in it, it has more time to melt. why u still put the pepper into the hot pan? ._. mix it into the eggs, so it don't become bitter. cheers

Oooooooh Dios Mio, the pepper goes in the sauce with gunciale, egg, pecorino and some oil. Cook pasta remove water add sauce to pot, you want it to be hot enough to partially cook sauce.
