โค๏ธHow to properly cook pasta (perfect side dish!) –
โค๏ธChicken Piccata
๐ชThe tools you will need:
Cutting Board
Chefs knife –
Large bowl/platter
Tongs –
Large saute pan –
๐ฅฉThe ingredients you will need:
โข2 skinless/boneless chicken breasts, butterflied and then cut in half
โขKosher salt and freshly ground black pepper
โขAll-purpose flour, for dredging
โข4 tablespoons butter
โขextra-virgin olive oil
โข2-4 slices of prosciutto
โข1 small box/1 cup crimini or baby bella mushrooms
โข1/4 cup chicken stock
โข1/4 cup marsala wine
โข2 tablespoons fresh parsley, chopped
๐ทThe steps you will take:
1. Season chicken with salt and pepper.
2. Dredge chicken in flour and shake off excess.
3. In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil.
4. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes over medium high heat.
5. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate.
6. Add additional olive oil if needed, quickly sautรฉ prosciutto.
7. Add mushrooms to prosciutto and cook over med/high heat until shrinks in size and turn golden brown.
8. Add marsala wine, bring to boil, let boil for a few seconds then follow up with chicken broth.
9. Add remaining 2 tablespoons butter to sauce, check for seasoning, and return the chicken to the pan and simmer for 5 minutes (medium low heat) or until chicken is fully cooked and sauce has slightly thickened.
10. Serve hot, garnish with parsley.
