Tender and Juicy Chicken Breast 🍗

Follow @drmattcooks for more recipes!

Cooking chicken can be intimidating, especially when cooking breasts on the stove top. Here I highlight a few of the key points to successfully achieve tender and juicy chicken breast that has a nice sear. There are many other ways to achieve it, and this is just one of them. Season with whatever you’d like. I kept it simple with salt and pepper to highlight the chicken itself. The instructions are the most important part. Enjoy!

Ingredients:
-chicken breast
-avocado or olive oil
-salt and pepper

Instructions:
-ensure that the chicken is thawed and pat both sides dry
-trim off any excess fat; butterfly and filet the chicken so it is even thickness throughout
-score each side of the chicken (optional)
-drizzle with oil and season with salt and pepper; rub it all in and repeat on other side
-set a nonstick pan or cast iron on medium-high heat and add about 2-3 tbs of oil; allow it to heat up for 2-3 minutes right until the oil is about to start smoking
-place the chicken pieces one at a time into the pan, laying them down away from you
-avoid overcrowding the pan; if you do not hear the searing, give it a minute before adding more
-press each piece down and leave them alone; cover with an optional splatter screen
-allow the chicken to sear for 3-5 minutes; once you see white coming up the edges, flip the chicken over
-cook on the other side for an additional 2-3 minutes or until the internal temperature is 165F
-remove the chicken from the pan and allow to rest for 10 minutes to let the juices settle
-enjoy!

  1. Idk how you cook it to 165 F, every time I try to get it to that temp the chicken is burnt and dry. I just try to time it for 2 min each side now.

  2. Just need to be smart on timing & letting it rest on the cutting board to finish cooking thru, to many people make the mistake of cooking to long on the pan and leaving it sit after.

  3. Can anyone try this for protien who have digestive problem bcz he has gone through some intestine cut surgery bcz i wanna gain some muscle mass with some dumble workout 😊

  4. for anyone here following this, after flipping the chicken (if just cooking 1 for yourself or 2) add some rosemary & thyme, 2 tblspn butter and some garlic gloves 2-3.. and then baste the chicken whilst it cooks and trust me, with the scoring done in the video you are going to have the juiciest flavours. just made mine there. Unreal.

  5. overcooked …. 165 is more like 175 because it carries on cooking (think of chilling an egg)
