Vegetarian Pasta – How to make a fantastic pasta using fresh vegetables! – RECIPE

Prep Time: 20 mins
Cook Time: 30 mins
Complexity: Easy

Ingredients (4 people):

400gr/14.1oz pasta (I used Caserecce)
1 eggplant
1 large pepper
120gr/4.2oz Parmesan/Pecorino cheese
a handful of capers
a handful of black olives (pitted)
garlic
rosemary
a glass of white wine
Extra-virgin olive oil
Salt
a chili

Procedure:

1) Cut the eggplant in cubes. If you suspect the eggplant may be a bit bitter, sprinkle some salt on the cubes in a sieve;
2) Put the eggplant cubes in a pan with some oil and garlic to gently fry;
3) In the meanwhile, take the “lid” off the pepper and get rid of its seeds. Cut the pepper in smallish bits;
4) Add some white wine to the eggplant in the pan and let evaporate;
5) Add a few capers in the pan;
6) Remove the garlic AND add the chili;
7) Pour some water in a large pot and get to boil. When boiling, add the pasta and cook until VERY ‘al dente’;
8) Now it’s time to add the pepper bits and some rosemary. Add some salt too;
9) Keep mixing while the pasta cook. When pasta is ‘al dente’, add the pasta to the mix;
10) Now it all comes together! Add the Pecorino cheese, mix with some of the pasta boiling water (very starchy!): this will create a natural cream!
11) When the consistency is what you want, ENJOY!
