Pure comfort loaded with Cajun flavour, this quick and easy one pot Cajun Beef Pasta guarantees to please any day of the week.

Serves 4

Ingredients
500g Beef Mince
1 Onion (Chopped)
1 Red Pepper (Chopped)
1 Tbsp Tomato Puree
1 Tbsp Garlic (Minced)
2 Tsp Cajun Seasoning
1 Tsp Mixed Herbs
1 Tsp Paprika
1 Tsp Salt
1 Tsp Pepper
500g Passata
600ml Beef Stock (2 Cubes)
300g Pasta
Handful Fresh Parsley
100g Cheddar Cheese (Grated)

Method
Begin by frying beef mince on a medium high heat for 2-3 minutes to brown, then add diced onion.

Continue frying for a couple of minutes then add diced red pepper.

Move everything around the pan for a minute or two, then add tomato puree, garlic, Cajun seasoning, mixed herbs, paprika, salt and pepper.

Mix everything together, then add passata followed by beef stock, stirring through.

Bring to a gentle simmer and add uncooked pasta giving it a final stir through.

Cover on a medium low heat for 12-15 minutes then uncover continuing to simmer for 5 more minutes until the liquid has reduced and the pasta is soft.

Finally, add a handful of chopped parsley and some grated cheese, stirring through.

And that’s it!
