  1. You need the Maillard reaction on the outside of the meatballs. It adds umami and richness to the dish. You’re supposed to deglaze the pan you fried your meatballs in with wine or cream and scrape the fond off the bottom. That’s a sauce base. Not 4 cans of tomatoes in a pot with parsley and mushy meatballs
