Ingredients (for 2 servings):
– Pasta (spaghetti, penne, or other) — 200 g
– Tomatoes — 200 g
– Bell peppers — 2 pcs
– Onion — 1 pc
– Garlic — 1 head
– Olive oil — 3 tbsp
– Salt, black pepper — to taste
– Dried herbs (basil, oregano, thyme) — 1 tsp
– Fresh basil — small bunch
– Parmesan or other hard cheese — for serving (optional)
– Fresh herbs (basil, parsley) — for garnish
– Cream cheese — 70 g

Preparation:
1. Roasting vegetables:
– Preheat oven to 200°C.
– Place vegetables on a baking tray, drizzle with olive oil, season with salt, pepper, and dried herbs.
– Roast for 25-35 minutes until soft and lightly caramelized.

2. Pasta:
– Cook pasta in salted water according to package instructions until al dente. Drain, reserving 100 ml of pasta water for the sauce.

3. Assembly:
– Blend roasted vegetables with fresh basil, olive oil, and cream cheese until smooth.
– Mix spaghetti with the sauce in a heated skillet.

4. Serving:
– Divide pasta among plates, sprinkle with grated Parmesan and fresh herbs.

Tip: For a spicy kick, add a pinch of chili or a splash of balsamic vinegar to the vegetables before roasting.
