I honestly eat this like every day and frankly, it's one of the best meals ever. Pasta, butter, oil and some seasoning is ALL you need. Add some sauted chopped sausage and veg to add a bit more to it and sprinkle a little cheese. Don't even have to be all fancy with it.
I found that just crushing garlic and putting it in oil and letting it sit for a couple hours achieves a very comparable result to these two methods. The garlic flavour will be more pronounced so definitely use less if you want a more subtle flavour, but it can definitely work almost as good with less effort 😅
Glad we're all enjoying it! We add bacon, onion, mushrooms and a bit of parmesan during and at the end to ours and usually get 4-6 big portions out of it. It's just so tasty, especially with more oil and chili flakes at the end for a bit more punch!

Why boil it 4 times? Why not just use the same water for 4 times as long
In italy we call this dish "aglio, olio e peperoncino" and it is the typical dish you would have at late night, typically after a party
