  1. When I stayed in Naples, I observed the local inhabitants and said to myself “The only difference between us and them is the language.” And language is less of a difference when in an Italian enclave of the US.

  2. I mentioned to you that I knew about Calabria my ex-husband came from but his family immigrated to Canada long ago. Will they consider if there is Italian versus here in the US is different. Even down to how the cheese is processed and made. And the type of pasta and noodles that you can buy their or make their versus here. It just depends on the family and what they kept up p of course it's telling America that's what they made that's what they adapted to when they came to say Canada or the United states. Like in the US you more likely are going to find soft cheeses. In Canada at least in Ontario it's almost hard even here in the United States what you would find in Chicago versus what you might find in New York would vary. I'll give you an example in the United States there's Hispanic food but it depends on if it's Cuban Hispanic Dominican Republic Hispanic New Mexican Hispanic food and it can vary.

  4. Some of it is similar and some of it is completely different. For example Chicken parm, and chicken in pasta is definitely not from Italy.
