Slow Living in Italy: Cooking Apulian Pasta and Baking Carrot Cake | Spring Gardening

In today’s episode, I will cook a typical Apulian dish: orecchiette with turnip tops and bake a delicious carrot cake with Philadelphia cream. I will also do some spring gardening by planting seedlings for my garden.

Carrot Cake Recipe:

For the cake:
– 250g carrots (peeled and cleaned)
– 3 eggs
– 160g seed oil
– 150g sugar (or 200g depending on taste)
– 240g all-purpose flour
– 1 packet (16g) of baking powder for cakes

For the filling:
– 500g cream cheese (Philadelphia)
– 200g powdered sugar

Instructions:

To prepare the cake, peel the carrots, wash them, then cut them into pieces and chop them in a food processor. Add the seed oil to the chopped carrots.
In a bowl, whisk the sugar and eggs until you get a fluffy mixture. Add the carrot cream mixture to the eggs and sugar, then stir well.
Gradually add the flour and baking powder, mixing to form a smooth batter.
Grease and flour a baking pan, then pour the batter into it. Bake at 180°C for 40 minutes. Check doneness with a toothpick.
Once baked, let the cake cool. In the meantime, prepare the filling: in a bowl, mix the cream cheese and powdered sugar together until you get a smooth, creamy consistency.
Once the cake has cooled, cut it in half and spread half of the cream on one side. Close the cake and spread the remaining cream on top. Decorate as desired.
Let the cake rest in the fridge for a few hours to allow the flavors to settle.

  5. Hi Cory, you can save the tomato seeds from shop bought tomatoes. Leave them to dry on kitchen paper and sow as normal. ☘️💚

Oh the fluffiness of that cake is something else my my your becoming a master at baking cory good job and the decoration looks the best, by the way may I suggest that you try and plant some cantaloupes and eggplants they are super easy and we basically plant them every year along side almost every summery plant 😂😂i think when some has the land and the water it’s a shame not to plant, one of my favorite trees is the Italian pines the candle pine i think it’s called ??

  13. Ciao,Cory!😊 Ce frumos e la tine, la noi în Galați q nins dimineață dar nu s a depus nimic. Și eu mai fac briose cu morcovi dar cu făină integrală ,are indicele glicemic mai mic cică. Am văzut ca ai plantat semințe de roșii. Mai ști gustul roșiilor noastre de altădată? Sau poate erai prea mică. Doamne,cât de bune erau!!! Acum nu mai găsești asa ceva😢.Îți doresc o săptămână cu spor în toate! Am uitat sa spun ca ador urechiusile lui Arly!😅
