1.25 oz Disaronno (or any Amaretto)
Dash Orange Bitters (Optional)
Meatballs:
1/3 lb each Ground Pork, Beef & Veal
1/2 C Breadcrumbs
1/2 C Ricotta Cheese
1/3 C Parmesean
1 Beaten Egg
1 tsp Salt
1 tsp Pepper
1 tsp Calabrian Chili
Small Bunch Italian Parsley
Sauce:
2 Tbsp Olive Oil
4 Cloves Chopped Garlic
2 x 28* oz cans Tomatoes (*I said 24 in the video but as one fantastic commenter pointed out, those large cans are 28 oz*)
12 oz can Tomato Paste
1 C Red Wine
1/2 Can Water
Sugar/Salt to Taste

Only use Garofalo spaghetti you can get at Costco. That stuff you’re using is awful. Also, only use Sicilian olive oil, Genco, if you can find it

I would suggest modifying this recipe. I would double, even triple the garlic being fried at the start (double the oil as well). Then fry your paste, add the crushed and diced tomatoes and an entire bottle of red wine. Bring it to a boil. Cover it. And lower the heat to the lowest it can go (I say that using a gas stove). Add your meatballs (they should have been broiled). And simmer for 3 to 5 hours. Stir every 30 minutes or so. You want your meatballs, which should be even parts of veal, pork and beef, garlic, salt, pepper, basil, oregano and parsley with bread crumbs soaked in milk, to finish in the pot.
I prefer spaghetti squash to pasta
If it’s pasta with sausage and meatballs then you use rigatoni.
I love pasta but this one doesnt raise my appetite at all 😅 maybe bcoz the sauce is too thick? It looks like sauce for pizza instead 😅

Where are the typical herbs? Why was the pasta overcooked (setting it aside and keeping it warm is a mortal sin) and why was cheap pasta used and not real spaghetti pressed through bronze dies (or Handmade)? Why was the tomato sauce poisoned with sugar?
The following ingredients are missing from the sauce:
– Oregano
– thyme
– basil
– rosemary
– Mayoran
– some grated lemon peel
– white pepper
– one small, medium hot chili pepper
– NO sugar under any circumstances!!! Good tomatoes are sweet enough!
NO ricotta, use real mozzarella instead!
The sauce can also be improved with courgettes, sautéed red onions and peppers. If you want it REALLY original, fry (slowly!!!) a few slices of overginen in a little olive oil. But salt them first and leave them to lose the water on a sieve or grid in the sun for at least 6 hours before adding them to good, medium-hot olive oil. The less water in the overgine, the crispier and less bitter it will be. Then place the overgine slices on the plate with the pasta, sauce and meat on top. Sprinkle the whole thing with Parmesano…. Simply delicious!

Don’t stir the sauce with the meat, shake the pot instead. You wouldn’t want them to fall apart.
In Italy we usually don't eat pastas with meatballs. Meatballs are served for themselves with the tomato sauce. We can also cook the meat in a pan, not in the owen.

Dude your Dutch oven looks atrocious. Pro tip: use baking soda and a little water to clean it. Work the baking soda into a paste then scrub. It will take all that stuff out that you burned to the bottom.
Vinny made a great sauce. Sometimes, he used too many onions, but it was still a good sauce.

you didnt need to cook the pasta so soon..you dont need to cook the pasta until the sauce is cooked through which for me when I make mine will take 2-3 hours or more

This is all wrong. First chop an onion, brown onion in olive oil, then add chopped garlic. 30 sec later pour in tomato sauce and paste. Add chopped basil. Cook for 4 to 6 hours. No damn sugar….you add sugar to cut acid of tomatos. Cook it for the proper time and it will be sweet naturally. Simmer the sauce with the meat in it for about another hour or 2. Sauce cooks all day, not this ticktok 15 minute bs.

This channel did a much better job deglazing with wine before the tomato.

Real Italian here.
Don't put the wine in after the garlic. You need to fry the tomato paste a bit to bloom the flavor. "Don't let it stick" is the key. Then the sauce has to cook for hours, to incorporate all the elements. Also, 2 sausages and all those meatballs is not a serving.
The only thing to drink with good food is wine, or water.

It isn’t sauce , it’s gravy . Anything with meat is gravy NOT sauce .
