Sardinian Malloreddus is a type of Italian fresh pasta. This is by far the easiest pasta shape you can easily make at home. Along with this regional Sardinian sauce, this groovy little gnocchi-shaped pasta is famous in the entire peninsula, most likely you can find it in grocery stores already dried and ready to be boiled. Also known as “Gnocchetti Sardi”, they pair extremely well with this sausage ragu, stewed with onions and Italian herbs.
It’s an old comfort food. And it’s seriously tasty.
Ingredients (for 2 people)
For the Malloreddus:
250 g Semola Rimacinata Flour
130 g Water (room Temp)
1 pinch of Salt
For the Sausage Ragu
2-3 Large fresh sausages (Italian)
1/2 an Onion
1/2 glass of wine
500 g Tomato Passata
1 tsp of Saffron
5 tbsp Water
2 tsp Oregano
2 tsp Fennel Seeds
100 g Pecorino Romano (if you can find the Sardinian one, even better).

How funny. I made these beginning of the week. I used saffron water to add some colour to the dough. Easy and delicious. Made them with cima di rape. Plenty of that at the moment in Puglia.

Bravo, io avrei fatto un sughetto porcini e gorgonzola. Solo 2 cose però, io sono per la cucchiarella di legname e quel tipo di pasta vuole la forchetta non il cucchiaio. Cmq bravo come sempre, viva la pasta, viva la pizza, viva l'Italia, viva la f..a!!!
