Slow Living in Italy: Cozy Baking and Cooking During Gloomy Winter Days | Amandina Cake

In today’s video, I’ll share my approach to slow living in Italy—embracing cozy baking and cooking on gloomy winter days, as well as how I care for my plants and home. The cake recipe I’m sharing with you is called Amandina cake, a dessert that brings back sweet memories of my childhood.
Amandina Cake Recipe:
Ingredients Cocoa Sponge Cake:
– 150 g flour
– 150 g sugar
– 25 g cocoa powder
– 6 eggs (room temperature)
– 4 tablespoons seeds oil
– 2 packets vanilla sugar
Ingredients for the Chocolate Cream:
– 250 g soft butter (room temperature)
– 250 g mascarpone
– 400 g dark chocolate (50% – 65% cocoa)
– 150 g sugar
– 4 eggs (room temperature)
– 1 tablespoon rum essence
– a pinch of salt
Ingredients for the Syrup:
– 150 ml water
– 50 g sugar
– 1 tablespoon rum essence
Ingredients for the Glaze:
– 200 g dark chocolate ((50% – 65% cocoa)
– 200 ml heavy cream (for whipped cream)
Step 1: Cocoa Sponge Cake
Beat the eggs, sugar, and vanilla sugar with a mixer for about 10 minutes until you get a thick, fluffy mixture. Gradually add the vegetable oil, mixing gently to incorporate. Then, slowly add the flour, followed by the cocoa powder, mixing carefully after each addition.
Pour the batter into a greased and floured baking pan and bake in a preheated oven at 180°C (356°F) for 30-40 minutes.
Step 2: Syrup
Pour the sugar into a small saucepan and let it caramelize over low heat, stirring occasionally by gently moving the pan without mixing. Once the sugar has melted and turned golden, carefully add the water. Let it boil until the sugar is fully dissolved. Then, add the rum essence and mix. Allow the syrup to cool to room temperature before using.
Step 3: Chocolate Cream
Melt the chocolate using a double boiler and set it aside. Meanwhile, also using a double boiler, beat the eggs with the sugar for 10 minutes. Continue beating with a mixer until the mixture becomes thick and creamy.
Gradually add the melted chocolate and mix well. Let the mixture cool to room temperature, then slowly incorporate the butter, mascarpone, and rum essence, mixing everything thoroughly until smooth.
Step 4: Cake Assembly
Slice the sponge cake into three layers. Soak the first layer with syrup, then spread a layer of cream. Repeat the process until the entire cake is assembled. Then, let the cake rest in the fridge for one hour.
Step 5: Glaze
Melt the chocolate in the warm cream, then let it cool slightly before pouring it over the cake.

Hello! Bad weather in Quebec does not compare to yours. We're expecting another 50 cms of snow tomorrow morning and we woke up with -17C temperatures this morning. We're used to it but like all of you we are hoping for spring to come soon. Still, life is the same for us; cozying up at home with warm dishes, cats and dogs snuggling under blankets.

We cope with our 2 feet of snow by staying by the fire, drinking coffee or hot chocolate, cooking/baking and watching movies. Every once and awhile we'll go out and dig, then come in and thaw. Rinse and repeat! Your cake looked lush. Yum. I hope you had a lovely Valentine's Day, despite the lack of sun.
Hola guapísima, si quieres triunfar en tu huerto como novata, te aconsejo plantar calabacines. Eso sí, con precaución porque crecen como alimañas, jejeje. Yo, como hortelana torpe, el año pasado plante 6 plantitas de calabacines y estuvimos comiendo calabacines hasta bien entrado octubre y hasta aburrirlos. Además, no hay que hacerles nada 🤷🏻♀️. Anímate con un par de plantitas este año y a ver que tal te va. Otra planta súper agradecida y que no se muere en invierno es la fresa. Espero que te animes y nos lo cuentes. Besitos ❤❤❤❤

Salut Cory, décidément nous avons de nombreux points communs 😃. J'ai commencé à faire mes premiers semis . En effet je vais commencer un potager en permaculture. Ma terre est trop argileuse. L'an passé j'ai essayé dans des pots. Seules les échalotes ont bien marché 😭. Il faut dire que l'on a eu un printemps pourri 😅
Alors après avoir déposé plein de matières organiques dans des bacs potagers tout l'automne et fait du compost j'ai hâte de commencer. Pour l'instant tous les semis sont dans le salon 😅😅. On a encore des températures négatives la nuit.
Je vais suivre avec plaisir l'évolution de tes plantations.
Je vais essayer de faire ton gâteau 🎂 au chocolat, il donne faim. 😘
