1 ½ Syns per portion (if using the pesto cubes) otherwise FREE
Serves 4
For the pesto cubes (optional)
80g fresh basil leaves
25g pine nuts
2 crushed garlic cloves
zest and juice from 1 lemon
50g grated parmesan
8 tbsp water
freeze into 12 portions ( one and a half Syns per portion) till needed.
For the pasta
2 x 400g cans chopped tomatoes
1 tsp chopped chilli
1 tsp chopped garlic
250g frozen spinach (thawed)
4 frozen pesto cubes (optional)
500g dried pasta
Pasta:
Cook the pasta according to the pack instructions
Add the chilli and garlic to the tomatoes. Stir in the spinach and simmer for a few minutes. Add the cooked pasta and stir well.
Pesto cubes:
Put all the ingredients into a food processor and blend to a paste. Divide into 12 compartments of an ice cube tray, seal in a food bag and freeze until needed.
