Alright guys, this recipe can be made a few ways. You can make fried chicken strips from scratch, use pre-made frozen ones, vegan/vegetarian “chicken” strips like I am using, or you can pick up some from your local fast food joint. Either way, this sauce and a few ingredients will take your chicken wraps to the next level, guaranteed!
Join me this week as we make some hot and crunchy chicken wraps that feature a mango/garlic/cilantro/lime sauce that packs a punch! This is a recipe I make often and pair with a nice side of coconut cilantro-lime rice, but you can also cut these in half and serve as an appetizer. Try them if you’re hosting or attending a superbowl party this year!
**Ingredients**
° Chicken Strips (I’m using Gardein Vegan Strips but you can use a frozen chicken strip, from scratch if you’re an advanced cook, or just pick some up from your local favorite fast food joint)
° Flour (or Corn) Tortillas
° 1 Medium/Large Diced Mango
° 2 Tbsp White Wine Vinegar
° 1 oz sugar or about 1 Tbsp of Agave Nectar
° 1 Tbsp water
° 1 shallot, minced
° 4 Tbsp Mayonnaise (can sub with vegan mayo if desired)
° 3/4 Cup Chopped Cilantro
° 2 Garlic Cloves, finely chopped
° 1 Tbsp Lime Juice
° Salt & Pepper, to taste
° Half a head of Purple Cabbage, shredded
° Ripe Avocado, sliced thin
***Steps***
1) Combine the Mango, Vinegar, Shallot, Sugar, and Water in saute pan over medium heat. Cover and Simmer until the mango is softened, about 10 mins.
2) Once done cooking, place on the side to cool and start baking your chicken strips. For the Gardein ones that I am using, it takes about 15 minutes to complete.
3) Once our mango mixture is cooled, transfer into a food processor and puree until smooth. Transfer to a mixing bowl and stir in the mayo, cilantro, garlic, lime, and season with salt and pepper. Transfer to a storage container and place in the fridge until ready to use.
4) Shred the purple cabbage and place into storage container in the fridge until ready to assemble.
5) Once chicken strips are ready, lightly toast tortillas and then we’re ready to assemble the wraps. On a tortilla, place about 1-2 Tbsp of the sauce off center and place the chicken wraps on top. Next top with the cabbage and avocado slices, then wrap and use a toothpick to hold in place if needed. Serve with side of choice and enjoy! Can be sliced in half for appetizer sizes if needed.
