Welcome to Day 10 of #TMSFavoriteThings! Today, I’m taking you on a culinary adventure to Catania, Sicily, where I discovered the most amazing clam linguine at Osteria Antica Marina. 🍝✨
This dish is a masterclass in simplicity and elegance. Unlike the milk-based seafood preparations we often see in the US, the Italian approach allows the true flavors of the ingredients to shine. It was a revelatory experience, much like how some wine enthusiasts prefer to avoid malolactic fermentation to preserve a grape’s natural expression.
To complement this wonderful linguine, I’ve selected the Di Meo Falanghina Tradizione 2021. This white wine boasts notes of pear, apple, almond, and a lovely minerality. The medium alcohol content provides a perfect body to match the silkiness of the pasta and the light sauce.
