Jamie heads to Naples, the pizza capital, to seek out the recipes the locals love to eat. There he discovers a seriously naughty street snack that is said to predate the modern pizza and is blown away by acquapazza, fish poached in `crazy water’.

  1. L' impasto fatto in casa e' diverso da quello fatto in pizzeria. Noi lo facciamo levitate il massimo 2 ore, e poi prepariamo le pizze. Nelle pizzerie invece, fonno l'impasto la sera prima, per il giorno dopo. L'impasto delle pizzerie che si rispettano…ha una lievitazione molto piu' lunga, anche perche non aggiungono molto lievito. In fatti una pizza con molto lievito si riconosce subito, da una pizza a lunga lievitazione.
