White Bolognese (Ragu Bianco)
A creamy and flavorful twist on the classic Bolognese sauce.
Ingredients:
* 1 pound ground beef
* 1 pound ground pork
* 1 large onion, finely chopped
* 2 carrots, finely chopped
* 2 celery stalks, finely chopped
* 2 cloves garlic, minced
* 1 cup dry white wine
* 2 cups chicken broth
* 1 cup heavy cream
* 1/2 cup grated Parmesan cheese
* 1 teaspoon dried oregano
* 1/2 teaspoon dried thyme
* Salt and pepper to taste
* Parmesan cheese for serving
Instructions:
* Brown the meat: In a large pot over medium-high heat, brown the ground beef and pork. Break up the meat with a spoon as it cooks.
* Sauté vegetables: Add the onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes. Stir in the garlic and cook for another minute.
* Deglaze and simmer: Pour in the white wine and bring to a simmer. Scrape up any browned bits from the bottom of the pot. Add the chicken broth, heavy cream, Parmesan cheese, oregano, and thyme. Season with salt and pepper to taste.
* Simmer: Reduce heat to low and simmer for 1-2 hours, or until the sauce has thickened and the flavors have melded.
* Serve: Toss with your favorite pasta and top with additional Parmesan cheese.
Tips:
* For a richer flavor, add a parmesan rind to the sauce while simmering.
* For a spicier version, add a pinch of red pepper flakes.
* Serve with a side salad or garlic bread.
