It’s Autumn and this week Jamie is in Tuscany tracking down the Nonnas who hold the
key to the regions hearty farmhouse cooking. In the picture-perfect Chianti countryside
he meets 88-year-old cookbook queen Nonna Miriam, who teaches Jamie her all time
favorite beef stew with homemade pappardelle pasta. Jamie cooks up a ragu that
takes the humble spag bol to the next level and then heads for the hills where he
recreates a mindblowing Jewish Italian recipe.

  1. The meat looks really good. I wonder what they feed their cows in Tuscany? Looking at that meat and pasta that he made makes me hungry.

  2. That's it that's it. The steaks… The best quality meat does not need a lot of seasonings. You want the quality of the product to always shine through. Roasted or broiled on the right temperature (don't over cook it or you lose the amazing juice's) and let it rest for at least 5 to 7 minutes covered so that the juices return to the center of the meat. End with just enough quality sea or kosher salt and ground black pepper to taste. With the best cuts of meat you just want to taste the real quality of the meat. You do not need extra seasoning. Try it and you will see😊

  3. My MA! She maka de sauce! She makes the marinara! When she makes it, she plays the operas. The notes come from the speakers, and they float across the air in the kitchen. The notes go into the sauce.
    The most important thing that makes it taste so good is that you are making it together! Salute!!

  11. I love it. But why to put lemons on steak Fiorentina? It's not how it's served. The meat inside was to light pink for some reason. It suppose to be dark red and little bloody. I think their heat source wasn't hot enough/too small fire.
