300g fresh tomatoes
Extra virgin olive oil
200g Gigantoni or any pasta of your choice (Rigatoni, pennette, etc.)
Primo Sale cheese or any goat cheese (substitute with mozzarella or parmesan if unavailable)
1 large clove of garlic
Fresh parsley (or basil)
Salt (to taste)
Optional: Chili flakes

Cooking Instructions:
Prepare the Tomatoes and Garlic: Start by slicing up 300g of fresh tomatoes. Next, take a large garlic clove and slice 2/3 of it into fine, tiny sliversโ€”just enough to release that wonderful aroma when it hits the pan.

Heat the Oil: Drizzle a generous amount of extra virgin olive oil into your pan and add the garlic and tomatoes. Toss in a pinch of salt, and let everything simmer gently on low heat. You want those tomatoes to soften up and blend beautifully with the garlic.

Cook the Pasta: While your sauce is coming together, bring a pot of water to a boil. Add some salt, then toss in 200g of Gigantoni (or any pasta you love). Cook it until itโ€™s just al denteโ€”that perfect bite where itโ€™s firm but cooked through.

Combine and Cook: Now, take your pasta, which should still have a little bit of bite left, and transfer it straight into your simmering tomato sauce. Add a splash of that starchy pasta water, then turn up the heat slightly to let the pasta soak up all those delicious flavors.

Final Touches: Now for the magic touchโ€”add the rest of the sliced garlic, a handful of freshly chopped parsley, and another drizzle of olive oil. Give everything a good mix for about 30 seconds, just until the pasta is fully coated and everything comes together beautifully. Then, take it off the heat.

Add the Cheese: Time to make it extra special. Cut the Primo Sale cheese into small cubes, and gently fold them into the pasta. The heat will soften the cheese just enough to make it creamy and delicious.
