Merguez can be lamb or beef or a mixture with cumin and chili pepper or harissa, as well as other spices such as sumac, fennel and garlic. We get ours from @carnivoreop but Italian Sausage would also be great.
Combining a can of cherry tomatoes and regular San Marzano or California tomatoes works great. Simmering them with bay leaves, garlic, and then basil for the last few minutes really is a simple and light sauce that compliments this dish.
