THE LEGS
“This must be a very good and expensive wine, look at the legs!”
There’s no correlation whatsoever with the quantity and the speed of the legs running down the glass and the quality of the wine. The legs simply tell us about the viscosity of the wine, which is due to either higher alcohol content or sugar.
ROOM TEMPERATURE
Red wine can be stored and served at room temperature.
I don’t know where this idea of room temperature came from, but it’s simply misleading. Different rooms around the world have different temperatures, we drink wine in different seasons, there are just too many variables and typically we like to drink wine at a temperature that is cooler than the environment. So here’s precise numbers for your red wine service: serve your red wine, depending on your taste and the style, between 15-18 C, 62-66 F.
Also, pro tip: it’s okay to put red wine in the fridge to get it to the desired temperature!
TASTE TO SEE IF YOU LIKE IT
It’s common practice for a Sommelier to give us a little taste of the bottle we ordered before serving it to the table. That taste is not to decide if we like it or not but to see whether the wine is okay to be served. It may be corked, it may taste weird, but the question is not about personal taste.
THE WINE WILL GO BAD TOMORROW
I’ve seen so many bottles poured down the sink! It’s okay to drink a glass of wine today and finish the rest tomorrow and even the day after. It’s actually fun to see how it will evolve over a period of 4-5 days.
A TEASPOON AS A CORK FOR SPARKLING WINE
It’s common knowledge in Italy (and in the US as well, I’d love to know if this is a famous practice in other countries so please leave a comment), that dangling a teaspoon instead of a cork or a stopper on sparkling will preserve it’s effervescence.
The teaspoon will make no difference at all, so if you want to keep your bubbles once the bottle is open there’s two things you can do: keep it cold and recork it with a stopper (this works perfectly fine)
