Step-by-step of this video below:
Slow-Cooker Garlic-Parmesan Chicken-
Ingredients
~1 lb chicken thigh or breast
2 small broccoli crowns (or substitute for another vegetable)
~6 small red potatoes
3 tbsp. avocado or olive oil
5 cloves minced garlic
2 tsp. dried thyme
2 tsp. dried parsley
2 tbsp. shredded parmesan
2 tbsp. butter
Salt & pepper
Instructions
1. Season chicken with salt pepper
2. Brown chicken on each side on a pan at medium heat with 1 tbsp. oil, about 3 minutes per side (chicken will not be fully cooked)
3. Dice potatoes and broccoli
4. Prepare large crockpot with cooking spray
5. Add in prepared vegetables, remaining oil, spices, and parmesan; mix together so vegetables are coated in oil and spices evenly
6. Top with slices of butter and browned chicken
7. Cook on high for 4 hours or low for 8 hours, until potatoes are soft and chicken is cooked through
8. Serve as is or top with parmesan cheese

Italian Pinwheels-
Ingredients
4 wheat wraps (burrito size)
4 oz. cream cheese
½ tsp. oregano
¼ tsp. garlic powder
~8 slices deli ham
~12 slices genoa salami
~16 slices pepperoni
~8 slices provolone cheese
~16 – 20 roasted red peppers
~16 – 20 banana pepper rings
Optional sides:
Celery with cream cheese
Pistachios
Instructions
1. Mix together cream cheese and spices (cream cheese should be room temperature)
2. Assemble wraps using 1 wrap and ¼ of each of the toppings listed above (or modified based on preferences)
3. Roll wrap tightly and slice into pinwheels
4. Serve as is, alongside celery with cream cheese and pistachios (as shown), or with any other preferred sides
