see it in the daytime or something kind of here it does have that old like New York City Tavern vibe in the day but at night it gets really dark and Moody and is this for handicap uh no it’s just like and fish and chops and you know all sorts of cool pasta dishes but really what we focus on here is is this incredible cheeseburger that become a bit of a cult following here in Brooklyn start with a a corn is grown in the mountain side of Campo Cambodia it’s right by the coast there um it has this like unique flavor to it where the jungle and the climate itself how wet and dry it gets during the season like the wet and dry season um gives this peppercorn such a unique flavor it’s so fruity up front it’s uh spicy but it’s a spice that like is like so floral and and beautiful and not like it this and and the chips don’t get soggy cuz there’s no water I love that herbs and french fries you [ __ ] kidding me it’s one of those you really don’t want to put down and you can put it on top of the pizza that’s crazy you can put on the pizza you can definitely on the pizza you want to eat some pizza no yeah that’s a nice pie that’s a beauty that’s a nice pie right oh yeah so this was called the odd father so we smoke the eggplant puree it zucchini and then we uh we take tempora tempora crumbs and then we just mix it with dried rosemary margm oregano so it’s like Progresso style breadcrumbs like you grew up for SE yeah forc exactly ex L but on tempora bits so it’s super crunchy 4G tempora bits only you it’s [ __ ] ridiculous all that amazing topping on there look at that crunch you still have on that crust that stands up immediately without a reheat yeah it’s nice right yeah it’s very nice I know you like the reheat but what we’re trying to do is you’re trying to apartment on a stove that comes with the apartment obviously the landlord paid no mind to what he was putting in there but he didn’t know that he was giving this man a brick of solid gold my name is Chris Hansel and I do a thing once a week for the last year out of here called Chrissy’s Pizza recently I’ve been simplifying it one special for a whole month so this whole month is a I’m kind of being a dick but it’s [ __ ] a rugulo all month that’s it or a regular pie where was the idea of Chrissy’s pizza for out of an obsession for pizza from a very young age my dad grew up in laurelon Queens and he would take us to all these pizzeria around that he liked he had these very specific rules like this place you got to order it well done this place does sesame seeds on the crust it’s really good and there’s like things that I learned at a young age and I liked how obsessive he was about it he passed away in 2011 and uh I noticed that I kept being obsessed and I think that obviously that’s because of just like paying tribute to him or whatever 2020 I started making pizza on my own and it sucked really bad I feel like if I had to go to work the next day if the pandemic wasn’t happening that then I would have given up way earlier but I luckily had a friend CH that was also doing it at the same time as me so I would call him every day what’ you do for your thr today and just read as much as I could and then started working at various pizzerias in the beginning of 2021 I spent a year in three different joints I loved working at the pizzas that I worked at because I learned speed I learned how to like keep up with everything working like the oven 10 pies at a time things like that but I found myself not practicing on my own as much I was like [ __ ] this I have to like do my own thing so in the end of 2021 I just kind of quit and triy to develop a recipe that I could give to out to friends my friend that I learned how to make pizza with like we kind of like yeah our dream is to open a shop together that’s what we’re working on right now he’s going to come up here and we’re going to do Chrissy’s together but then we’ll do his bar pies like once a week to like have like bar pie Friday or like whatever insan it’s going to be [ __ ] up cheers man cheers man thanks for coming by man thank you for having appreciate you usually it’s just a pickup thing but for you know for special occasions he invites you into the home for tastings we had some beautiful wines that just went perfectly with pizza oh that’s delicious that’s really good huh pretty clean right it’s great oh yeah I wouldn’t I wouldn’t pick that because cover is not as like headyy as usual it’s like anime yeah these are very subtle labels are you timing this yeah yeah it’s a 10-minute bake cuz this thing only goes to I mean you can see it’s a very shitty I came with the apartment I don’t even know I never heard of a mano before I’ve seen this before 20 pies a week once a week I do it four weeks in advance to try to make sure everybody can get one and it still sells out in like a minute I mean it makes sense it’s like she can only do so much that looks beautiful it is a great stove because it’s one of these old ass doesn’t have no frills you know it’s just it’s made like a [ __ ] Workhorse no one has that on eBay you have to go to a [ __ ] basement somewhere in the Bronx you have to go to a basement Somewhere in Brooklyn like that’s where it’s going to have it in these old ass buildings oh look at this thing see I mean it’s all right that’s [ __ ] pretty beautiful it’s a little light but I get yelled at on my friends for saying that I think this pizza is too crispy smells great thanks man smells tremendous look at this symmetry it’s like a paper plane you know it’s like that first fold right it now you know it’s going to fly well tastes like the movie theater for like going to the movies and chilling just tastes like chilling awesome it’s Crusher [ __ ] bang trying to make a pie that me and my pops used to get as a kid or like the various the various pies me and my pops used to get as as a kid like that’s what I’m saying there’s there’s there’s essence of all of that within this one slice amazing when I tasted this pizza it just took me back to a place in time in which in where I was playing video games in the pizzeria big thing [ __ ] coke with ice that slice that cracks when you when you fold it just like perfectly done it was like the birthday party at [ __ ] Smiles where everyone was playing video games and then we ate the good pizza this a directo just of the way they’ve done it back since back in the day like like just long fermentation Next Level Italian like starter no no that’s why it tastes like that that’s why it tastes like New York City right because nobody used that [ __ ] Next Level [ __ ] that that came over with like another another wave of heads right that’s like the best compliments I’ve gotten about it is that when people say it reminds them of the pies they were eat when they were a kid in New York what were some of the pizza places that you were saying that you went to I grew up going to King Alberto which is still my favorite Reg slice and this place anona in Valley Stream that was on Rockway Avenue my dad took me to a place called Da Vinci that had a sesame seed crust that was on Merck Road like right before Valley Stream turns into Queens by the Cross Island Expressway Chris he is a man of taste I could tell he’s been around he’s a neighborhood guy he’s from two exits away on the Long Island Expressway the [ __ ] crunch on this man oh my God H oh what was your spots girl I live right across a street from this place called Napoli they were Afghani okay um up the block was Franchesco which was like an old Italian man which was fire they had these slices that used to the cheese would fall off you know it would be like [ __ ] drenched in cheese and then we would get the extra cheese cold on top of the hot slice that changed the game we started doing that cold cheese slice yeah like let me get extra cheese on it like started [ __ ] manipulating your order he loves music he loves curation he’s one of these people that you shouldn’t be judging a book by their cover he has many layers to unfold usually dudes who are like a little bit different on the outside hold the most substance on the end I want to make you a white pie with a sesame seed crust which just fresh Ms age mods I got this cave age Grier that’s really nice I don’t want to Gra on it and then spicy soada but on the Finish like after it’s out already that slices of spicy soada and like olive salad kind of like a muffaletta type type situation let’s get it you ever have that sandwich in New Orleans the muffaletta it’s on like a sesame seed yeah yeah olive salad on room temp because that mimics more of a sandwich ooh uh man look at that yeah that’s like this is you can smell that Grier on there it’s my favorite so I like putting the so Sada on cold once you put it on the pie it melts melts into it so it doesn’t get hammered like it would in the oven where it’s like that’s my favorite version of like letting that come to just warm that’s right you get that full flavor that exactly yeah when it’s like melting in your hands and greasy and [ __ ] you know yeah yeah and if you don’t mind I’m just going to use my fingers for I would love for you to do that just [ __ ] there’s no other better utensil alapo give a little bit of heat since the olives aren’t that hot man this is a special looking
