Homemade Italian ravioli
Ingredients:
200g all-purpose flour
2 eggs (room temperature)
1 tbsp salt
Filling:
250g ricotta cheese
500g cooked Spinach
1 tsp salt and pepper
A pinch of nutmeg
100g parmigiano cheese
Indications:
Knead the pasta dough until it becomes soft, then cover it with plastic wrap and let it rest for 30 minutes to room temperature. Roll out the dough until it becomes thin and you can see your fingers sideways. Insert the filling and make shape with the mold. Immerse the pasta in boiling salted water, it will be cooked when it comes to the surface after about 2 minutes. Melt the butter in a pan and flavor it with sage and mix it with the ravioli, finally serve the ravioli with parmesan cheese.
