I just got this Philips Viva Compact Pasta Maker (HR2371) and I have a question.

From what I’m reading and seeing, an issue with pasta extruding properly is the right ratio of wet and dry ingredients. Does this mean I should not use recipes that are not in the recipe book that came with the machine?

I’d like to be able to make gluten free recipes sometimes, my niece has celiac disease. Also just want to experiment with other recipes.

I’m an experienced bread baker and pie crust maker so fiddling with texture is not intimidating to me. I’m guessing I’ll be able to add ingredients as needed to make the machine work properly? Does anyone have experience with this machine?
