I am making the popular classic Tiramisu! It’s easy, delicious and it certainly does pick you up!

You Will Need:

6 Eggs, Separated
200g Sugar
350g Mascarpone Cheese
175ml Double Cream
½ tsp Vanilla Extract
34 Lady Fingers (Sponge Fingers)
300ml Espresso, Cooled
2 tbsp Cocoa Powder, for dusting

WRITTEN RECIPE:

1. Beat the egg yolks and sugar until its pale and creamy, about 5 minutes. Blend in the mascarpone and set it aside.

2. In another bowl, beat the double cream until it forms soft peaks. Add it to the mascarpone mixture along with the vanilla. Fold it until its combined. Set it aside.

3. In a clean bowl using clean beaters, beat the egg whites until it forms stiff peaks.

4. Add half the egg whites into the mascarpone mixture, then repeat with the remaining half.

5. Dollop a third of the mascarpone mixture into a large dish and spread it to even.

6. Dip half the lady fingers into the cooled espresso and add it on top of the mascarpone.

7. Spoon some espresso in each soaked lady finger (without drowning the mascarpone).

8. Continue to repeat the layer, finishing with a layer of the mascarpone mixture. Cover the tiramisu and chill it for at least 6 hours or overnight to set.

9. Once set, dust the top generously with cocoa powder and serve.

NOTE:

-This tiramisu will last for up to 2 days in the fridge.
