To begin, we need 1 and 1/2 cups ofΒ lukewarm water. To the warm water,Β Β add 1 teaspoon of honey, followedΒ by one packet of yeast. Give it aΒ Β quick mix and let it rest for about 5 toΒ 7 minutes or until you see bubbles on top.
Then, in a large mixing bowl, add 3 andΒ 1/2 cups of all-purpose flour. Season theΒ Β flour with 1 and 1/2 teaspoons of salt,Β then whisk to incorporate. Combine theΒ Β flour with the yeast mixture using a woodenΒ spoon. Mix until a dough has formed. MakingΒ Β
Focaccia takes a few hours to make,Β but trust me, it is totally worth it. Once the dough has formed, add 1 tablespoon ofΒ extra virgin olive oil. Continue mixing untilΒ Β well incorporated. Now, cover the dough and letΒ it rest for about 1 hour or until doubled in size.
Once the dough has doubled in size, we are goingΒ to be doing a series of stretch and fold. ThisΒ Β dough is a high hydration dough, which means it’sΒ a really wet dough. The dough is very sticky,Β Β so to prevent it from sticking to your hands,Β soak your hands in cold water first beforeΒ Β
You touch it. Then, grab one side, stretch,Β pull, and fold. By stretching and folding,Β Β this is going to develop the glutens in theΒ dough, and it also creates the air bubbles inΒ Β the focaccia. With your other hand, turn theΒ bowl as you stretch and fold. Do this aboutΒ Β
Four to five times. We are going to be doing fourΒ series of stretch and fold. You want to do aboutΒ Β four to five stretch and fold per session.Β Then, cover the bowl and come back in anotherΒ Β 30 minutes and do another session of stretchΒ and fold. Even though this looks complicated,Β Β
It is not. The dough is hanging out in the kitchenΒ by itself for most of the time. All you are doingΒ Β is stretching and folding in between the 30-minuteΒ mark. That’s allβeasy peasy. This was our firstΒ Β
Time. We’re going to be doing this another threeΒ more times. Cover the dough and let it rest forΒ Β 30 minutes. After the dough has rested for 30Β minutes, do the second stretch and fold. RememberΒ Β to wet your hands in cold water to prevent theΒ dough from sticking to your hands. Then, coverΒ Β
And let it rest for another 30 minutes. AfterΒ 30 more minutes, do the third stretch and fold,Β Β and after 30 more minutes, do the last stretchΒ and fold. So, four stretch and fold sessions. Meanwhile, let’s create a topping forΒ the focaccia. In a small mixing bowl,Β Β
Combine two tablespoons of water, 2 tablespoonsΒ of extra virgin olive oil, 1 and 1/2 teaspoonsΒ Β of minced fresh Rosemary, and two cloves ofΒ minced garlic. Then, whisk to combine. Now,Β Β in a 9×13 cake pan, add 1/4 cup of extraΒ virgin olive oil. Ensure that the oil isΒ Β
Covering the whole bottom of the pan. Then,Β transfer the dough into the prepared pan. WetΒ Β your fingers with cold water first and thenΒ stretch the dough to shape it in the form ofΒ Β the pan. As you do that, ensure that the doughΒ is covered in the extra virgin olive oil. Oh,Β Β
