Penne all’ Arrabbiata
Sweet, spicy and overall just a gorgeous dish!
Ingredients:
1 tin Italian (good quality) tomatoes – either whole peeled or diced
Olive oil – 3 tablespoon
5 medium cloves of garlic
2 red chillies (remove seeds)
A handful of basil and parsley (on the stem)
Salt and pepper to taste
1-2 teaspoons of sugar if tomatoes not sweet
Method:
Put the oil in cold pan and put heat on medium, add garlic whilst oil is still cold.
Lightly crush or chop garlic (doesn’t have to be finely chopped)
Once the garlic starts to soften – but before it gets brown add chopped chillies
Add tomatoes to pan
Fill can full with water and add to pan
Bring to boil then drop to lowest temp on stove and simmer
Add salt/pepper/sugar (can adjust once sauce has reduced)
Add parsley and basil (both still on stem to sauce)
Reduce sauce till thick (I added water it reduced to about 1/4 its original volume)
Remove the basil and parsley from sauce once thick
Use back of spatula to crush pieces when you stir to get a smoother sauce (alternatively a hand blender works, but I like small chunks)
Boil pasta in salted water till almost done.
Add pasta to sauce with some reserved pasta water and allow to finish cooking.
Serve with basil and Parmesan cheese
