Nice chef platting
I learned ballotine differently. What I learned was more of a roulade I suppose. The whole breast puree mix went inside a deboned whole leg/thigh. Everything else about the same except of course the plating was the full ballotine shingled across the sauce.
Plus we just tossed the wrapped product on the stove in water we didn't have any circulators lol.
