This week, we visited Chefs, Co-Owners, and Made In customers Niki Nakayama and Carole Iida-Nakayama of LA’s iconic n/naka, a hyper-seasonal restaurant with a 13-course tasting menu and 2 Michelin stars. Despite its inconspicuous locale—n/naka is in a strip mall, flanked on either side by a CPA and a neighborhood pharmacy—the menu follows the traditional structure of kaiseki, a formal Japanese dining style with historic ties to Zen Buddhist monks, imperial courtiers, and samurai elite.
