
I just came back from Italy and spoke with 3 professional chefs and 2 home cooks and hands down without hesitation they recommended the Imperia. They didn’t mention the Marcato so I wasn’t even aware it was an option. I was surprised when I came back to America and saw every American online blog recommending the Marcato. There are essentially 3 different claims as to why it’s better:
1. Marcato has more pasta-cutting attachments
2. Marcato has more colors and a more modern design
3. Marcato has a better build
Number one isn’t big for me as I would never buy every attachment but I guess I have to see if there’s one I’d really want that might not be included with the Imperia.
Number two is concerning because every time you get a colored appliance it runs the risk of scratching some point down the line. It’s like when someone buys gold utensils, I guess people aren’t aware that’s a surface coating that comes off. Even though they look gorgeous, I’d want something that’d look good for the longest time possible and therefore would stick with the stainless steel for either brand.
Number three, I don’t really see anything to substantiate these claims. The build quality seems to be essentially the same unless people know something I wasn’t able to find.
So do people know why Italians prefer the Imperia? Are there any significant differences?

I have a marcato atlas and the kitchen aid attachment for pasta. The clamp and the lever both broke on the marcato but the rest of it’s fine. I prefer the kitchenaid if you can afford it.
Marcato offer a 10 year warranty and have excellent customer service.
I have a Marcato Pasta roller and honestly it is hard to use sometimes because it bounces around while trying to use it. I recently got a new kitchenaid attachment for my mixer and it is awesome. I highly recommend the kitchenaid Pasta roller and attachments. Ease of use is off the charts.
Why not ask those Italians why they recommended the Imperia?
As for the color, it’s anodized—it’s in, not on. Color or stainless, the interior has less possibly concerning metals with the new models. Not sure Imperia is the same. But what really matters is how it works and I can’t speak to that.
