Homemade pasta is amazing in the right applications, but don’t sleep on a high quality dried pasta for some dishes. You’ll never be able to achieve the toothsomeness of a dried pasta with fresh. I highly recommend De Cecco, it’s a widely available brand that is noticeably better than cheaper options.
