Paulie did the prep work. He was doing a year for contempt and had this wonderful system for doing the garlic. He used a razor, and he used to slice it so thin that it used to liquefy in the pan with just a little oil. It was a very good system.
how about use the dry cayenne pepper? that's deal with chili??

I see many chefs just put in large slices of garlic. I’ve always chopped garlic finely and cooked it down so you don’t have to worry about a big chunk of garlic in a bite. But I guess it’s easy to avoid if they’re big chunks on the plate?

Who doesn't love this guy!!?? Cooks with passion and just goes to show, despite producing some complex dishes, they show us with their simple ones that you don't have to be a genius in the kitchen to get magnificent results. Let the ingredients do their thing!
Antonio in his his book Pasta replaced chilli with nduja. I tried that and will never make Arrabiatta any other way again its so delicious.
RIP Antonio. We still miss you.
