We just got back from Italy and, when we first opened the fridge, we realized we had no food in the pantry! Well, not quite… We had dry pasta, some cheese we brought back from Italy, and some butter. With those ingredients, we made a classic and SUPER SIMPLE pasta dish that happens to be one of our favorites.
This pasta dish got us thinking about what a versatile ingredient butter is. With it, you can make a ton of incredibly simple, easy, quick, but delicious pasta sauces. Today, Eva’s sharing some of them with us!

I make homemade pasta, I will do a day and make several batches. some regular some vegi. I freeze it. Then I can just pull some out and add
whatever I have. I love Anchovies, and garlic in olive oil. Top with Parmagan.

I LOVE Aj's!! I'm from Tampa, FL, an area with a heavy Italian and Cuban influence. I now live in Phoenix and Aj's is about the only place I have found ingredients I need for cooking Cuban dishes. Most ingredients I use for Italian cooking can be found elsewhere, save some very specific items…like certain pastas and better cheeses.

This is my go-to. When my husband and I were in our early 20‘s, we barely made our rent and utility payments. Often there was no money left the last week of the month (he had a low-paying job and I was not yet permitted to work in the country we lived in). When his parents couldn‘t give us a bit of cash, we literally lived a week or two a month off of dried pasta and butter. Anyone recall those pats of butter from restaurants and cafes? A waiter we knew collected them for us when they weren’t used by patrons. We put lots of stuff on pasta: cheese, nuts, chocolate syrup, herbs, apples, etc. We tried to have fun with it, cause what else are we going to do. After about nine months of that, I my work permit came through and I started working. To celebrate my first paycheck, we went out to eat. Greek, not Italian. No pasta!
When using so much pasta water, be careful not to salt the water as much as you normally should.

I use saffron on my rice I never seen it used on noodles. I will definitely try. Rice and beans are my go to you have nothing in the pantry kind of day.

Anchovies from Italy are very expensive here in the states FYI. I only buy them for special occasions like Christmas Eve Feast
Great episode! I was inspired to make a quick hack using shrimp ramen noodles and butter. It was delicious and easy! The hardest part is washing the pot, and that's not hard at all.

With Peruvian parents, the quickest dinner with staples is rice cooked with garlic and black pepper, a fried banana split in half in butter, and a fried egg on top. Yums!
