Shrimp scampi is a classic Italian-American dish that is perfect for a quick and easy weeknight meal. This Daddy Jack’s recipe is made with fresh shrimp, garlic butter, white wine, Roma tomatoes, mushrooms, lemon juice, and it’s served over a bed of linguine pasta.
The shrimp is cooked in a garlicky butter sauce that is both flavorful and light. The white wine adds a touch of acidity, while the lemon juice brightens up the dish. The linguine soaks up the sauce, making each bite incredibly delicious.

Ingredients for Butter Garlic:
• 1-pound of unsalted butter (softened)
• 2-3 cloves of garlic (chopped)
• ¼ tsp. of salt & black pepper
• 1/2 tsp. of Paprika
• 1 TBSP of Worcestershire
• Juice from ½ of Lg. lemon or 1 whole sm. lemon
• 2 TBSP of Italian parsley 9chopped)
• Salt and pepper to taste
• 1 pound linguine pasta, cooked according to package directions
Instructions: Mix all ingredients at once until evenly mixed.
Shrimp Scampi Ingredients (Serves 3-4)
• 1-pound of Linguini Pasta
• 1 & ½ pound of Gulf Shrimp
• 2-3 cloves of garlic (chopped)
• 4 TBSP of Olive Oil
• 3 Cups of All-purpose flour (salt and pepper to taste)
• 1/2 pound of our garlic butter
• 1 cup of white wine
• 3 Roma tomatoes (diced)
• Juice from ½ of Lg. lemon or 1 whole sm. Lemon
• 2 TBSP of Italian parsley (chopped)
• 2 TBSP of green onion (sliced)
• Salt & pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
2. Dredge shrimp in the flour mixture and coat evenly
3. Add the shrimp and cook until slightly pink and cooked through, about 2-3 minutes.
4. Add ½ pound of the garlic-butter, cup if wine and sliced mushrooms (cook for 2 minutes)
5. Add diced tomatoes & Italian parsley and remove from heat
6. Add juice of ½ of lemon
7. Serve over Linguine or with your favorite bread and enjoy!

Thank you for doing a Daddy Jack video! I miss Jack's videos. I could never bring myself to watch Jack's videos at home during the lock downs, he just wasn't in his element (the restaurant) and it was hard to watch. I bought a shirt after watching his daughters video after his death. I had always hoped to get up to the restaurant one day, but life had other plans. Cherish every moment folks.
