Ingredients for the soup:
-1 lb of zucchini
-1/2 cup extra virgin olive oil
-3 tbsp butter
-1 cup carrots
-1 cup celery
-2 cups potatoes
-1/4 pound green beans
-3 cups shredded cabbage
-1 can cannellini beans
– 6 cups of beef broth
– 1/2 a can of imported plum tomatoes
– salt

For the croutons:
-A loaf of white bread
-Vegetable oil

The making of this soup brought to me a new appreciation for the soups I was privileged to have growing up. Whenever I had a cold or it was minus 30 outside I knew my mom would be whipping up a batch of soup similar to this. I love this recipe and the results it gave, I think this is the first recipe to make me feel emotional. When I ate it I felt filled with nostalgia and thoughts about my mother and her amazing soups. I recommend this recipe to anyone because it’s amazing, it’s really fun to make and you can tell it was written with love. Thanks for joining me again and I’ll see you next time:)
