Ingredients and directions:
1 red onion finely chopped, cooked in 2 tablespoons of olive oil , stirring constantly over medium heat (preferably in a 5.5 quart Dutch oven or similar), until tender
throw in 1 pound of ground beef (preferably grass fed or similar) cooked until done and all the juices have reabsorbed
Add 5-6 cups of tomato sauce – homemade or store bought – bring to rapid boil
Turn down heat to low and simmer 1 hour and 45 minutes, partially covered so steam can escape, stirring occasionally to keep sauce from sticking to bottom of Dutch oven
