Cool!
I have been thinking about using Amphora just for doing MLF because I would like to try for more steady micro oxygen exchange at that stage, then transfer to barrels after the completion of ML. There are some gorgeous traditional vessels made in Crete, that the producers claim will hold wine, but I am having difficulty importing them to the western USA. Any thoughts?
update – now using fiberglass tanks. wines still great.
