These Italian quesadillas with pesto are so delicious as well as simple and easy to make. They only require a handful of ingredients that you probably have on hand. You can serve them for breakfast, lunch or any meal of the day.

Italian Pesto Quesadillas Recipe
Makes: 2 servings
Ingredients:
2 soft tortillas (You can use any kind you like)
2 tbs pesto Genovese
100 g grated cheese (Like mozzarella or any mild cheese)
Salt and pepper (Optional)
Method:
1. Spread the pesto on the tortilla.
2. Grate up the cheese, or use store bought. Spread it in an even layer on top of the pesto.
3. Bring a pan to medium heat, brush it with some oil and place the quesadilla in the pan.
4. Cook it for a couple of minutes, or until the cheese is almost melted. Flip the tortilla on the side and let it cook for another minute.
5. Serve it with a simple green salad.
