Recipe can be found in Marcella Hazan’s “Essentials of Classic Italian Cooking”.
Ingredients:
-Vegetable oil
-4 pounds boneless beef roast (I used chuck)
-1 tablespoon butter
-3 tablespoons of onion, carrot & celery
-1 1/2 cups of dry red wine
-1 cup beef broth
-2 1/2 tablespoons canned chopped Italian plum tomatoes
-Dry thyme
-Salt & pepper
Episode 6 and my appreciation for this cookbook continues to grow. There is a couple other ones I want to work my way through as well but for now this is like a treasure trove. I really loved this recipe and by the end of it the beef was just falling apart and tasted scrumptious. The only thing I’d say is make sure to schedule the cooking into your day because I started this at 10:00 at night and finished at 2:00 in the morning. I may have only slept 4 hours before work the next day but it was worth it, that is how good this beef is. Thanks for joining me and I hope to see you again soon:)!
