Today we’re making a classic Italian beans and greens soup. I used escarole, but you could easily sub spinach or kale if escarole proves too hard to find. I hope you enjoy this escarole and beans soup!

ESCAROLE AND BEANS SOUP PRINT RECIPE:

Escarole and Bean Soup

Ingredients
¼ cup (54g) olive oil
4 ounces (114g) pancetta – diced
3 ribs celery – diced
1 medium onion – diced
3 cloves garlic – sliced
2 medium Russet potatoes – peeled and cut into small cubes
1 pound (454g) dried cannellini beans soaked overnight, or 3 16-ounce cans
1 head escarole – washed and chopped
6 cups low sodium chicken stock – plus more to thin as needed
salt and pepper – to taste
1 small Parmigiano Reggiano rind – optional
½ cup Parmigiano Reggiano for serving

  3. to prevent the drip line the spoon against the edge of the container you are pouring from . The liquid will wick the utensil, chemists do this

  5. Yar James wants salt , you are 'dude you don't have to worry about blood pressure'. It's life. Looks like a GREAT soup recipe and not too far from my weekly or every other week bridge clearance I've been doing the last 3 or 4 months. I love a recipe but the outline that is shown here is classic, make it your own add carrots or whatever and make soup. Clear out your veggie drawer as best you can. Saves food waste and you will surprise yourself.

  12. Try pouring from the side instead of the spout with the pyrex. Pour with confidence. No drips that way.

  15. My family hates escarole so I make it with spinach. I prefer the escarole, but the spinach is a good replacement. Great recipe!

  16. I would add some type of acidity to the soup instead of salt. Like a little lemon/lime juice or a splash of white vinegar. I bet that will make it pop

  17. My glass Pyrex measuring cups always spill, too! It's really annoying, and can affect a recipe. @Pyrex please fix the pouring lip issue…

  22. Hi Guys. I love your videos and your recipes. I am UK based and love Italian food which is very popular here. But your recipes are a little different to the norm, even of those recipes by Italian chefs in the UK. I love that difference. Can I please ask that as the American "CUP" amount means nothing to Europeans that when making the video you also give the gram or millilitre equivalent. I know you give that in your notes, but sometimes I like to cook the dish whilst watching your video. I must try your Sheperds Pie as it is seen as a classic English here, to see the difference you make to it. Keep the videos coming and love and happiness to you and your family.

You guys are so adorable.Could pare it with Brie or feta incrusted bread also and and a couple tablespoons of Greek yogurt maybe or buttermilk for creaminess maybe some white pepper as well.But the greens would of never thought of doing that , that’s a super good tip I’ll have to try very soon.

  26. There's a soup just like this one from Spain and they use Mustard greens..It is amazing! Only difference, which is a super nice touch is they add like 1/2 t. of Smoked paprika. Gives it a nice touch. Instead of pancetta, they use Smoked ham hocks! Really enjoyed this video! Reminds me of that Spanish soup❤❤❤
