  3. As a northern italian I'm glad you chose the north for your trip 'cause the most known italian cuisine n the US is the southern one due to immigrants who exported it, but in the north the food is delicious and very different.

To know really italy i thing that you have to go to lunch whit a granma. Every italy region has her recepy and if you came here in sardinia where i live, try " culurgiones " it's a dumpling, has a particular form and inside it there is potatos and a special chees, that's a delicate taste but when i ate it i know that is hell and paradise in the same time. it's paradise becouse if i ate an other one that's amazing for me, and if i ate an other one it's hell becouse is there one less than before

  6. So happy you had a good time in my motherland I'm Italian American from Bensonhurst Brooklyn but i went through the 2 year process of getting my Italian citizenship and food in Italy is unlike food anywhere it really is the best but if you ever go back go to Southern Italy next time

  9. 24 months is the perfect seasoning for eating the cheese in pieces. 30 months or more is used grated over pasta or for cooking, the flavour is MUCH more intense and salty. Great video !

I dream of traveling throughout Italy, spend at least a month just going to small towns and villages to taste the local wines, cheeses and cold cuts, and to learn the secrets and recipes of regional cuisines. I wish I had the money for that, because it’s been my lifelong dream since I was a teenager.

  14. italian products has the most preservative products in the world..that why you dont eat more than 50 grams per servings on their prosciutoo and salamis and mortadella..

  17. As an Italian I can disagree with you, the best cheese in the world is 'Gorgonzola'. Try it, you never forget it.

  18. The red cow breed you were mentioning in the beginning is the Reggiana Red Cow, a very traditional breed which was much more widespread in the past because the black and white frison was and is much more productive in quantity (less in quality).
    Anyway, nowadays that breed has been rescued even though it is still a niche, especially of the province of Reggio Emilia, between Modena and Parma.

  19. You forgot to say a very important thing.
    Parmigiano Reggiano is produced only in the province of Parma, Reggio Emilia (where i come from), Modena and Mantova.
    Grana Padano (a copy of Parmigiano Reggiano) is produced all over north and central Italy.
    By the Way, im sure you're going to have a really great expreience with culatello.

  20. Guga, if you are a cheese guy, you should not stop at the most famous, when you are here. The parmigiano is important, if not fundamental, on an italian table but there is literally a world behind. There are many beasts (cows, goats, sheeps, buffalos, donkeys, horses, deers or pigs) and we milk all of them, creating so many different cheese that is hardly to believe for a foreigner. And i'm talking just about the aged ones, AFTER you can try even the fresh cheeses, as mozzarella (guess what, even they are A LOT). I don't know why France is probably the notorious one about cheese: don't misunderstanding, we are rivals but even they are very good about, and they do really good cheeses, but i'm pretty sure that there's an italian corrispective for every cheese they make and way way more than this.

  24. imma tell you something.. before this i always ridicule italian people about their behaviour when it comes to their food… for me they almost pretentious kind.. they have literally more than 600 names or kind for their pasta.. but when i went to italy i learn about their culture and the way they live, eat and cook i understand why they behave like that.. the care ,love and attention to details is just out of this world.. the italians totally deserve their respect when it comes to their food… im so sorry italian people for making fun and disrespect italian food before this…

  25. There are 4 kind of cows for the parmigiano reggiano, and the milk must be 24h fresh. My fav is "vacche brune" (black cows) 36 months
