Always did tomato sauce but will do al bianco next time… easier LOL.
I did have a delicious big åss meatball on a plate of fusilli lunghi in Naples last October though. It was called "pasta alla mamma" in a restaurant in the Spanish Quarter Full of locals, so it wasn't a tourist spot for Americans.
I only make my meatballs 1 way and thats Evas Mammas way…. delicious

There's a meatball restaurant in NYC that makes a smorgasbord of 'balls using every meat combination imaginable – lamb, chicken, pork, beef, bacon, buffalo, etc. Stand-alone, in marinara, in a sammie, over pasta, on a skewer….VERY popular place.

Minnesotans are a varied. National but classic Scandinavians treat food with the same classic earmarks of lots of meat eggs and dairy, etc. A taco is wonder bread with hamburger meat and French dressing.
Only one problem. Your meat was ground too fine. My mother always chopped up the meat by hand or had the butcher use a larger cutter when he ground the meat.
So we are obsessed with your tomatoe sauce and meatballs. I’m a baker and was raised with parents who cooked as well. My biggest lesson from you Eva is less is more!!! The natural flavors In excellent ingredients outshine anything I’ve cooked so far. Mama Mia I’m in love with your recipes and the absolute joy you have in your cooking and love of good food. ❤

My grandmother would always make some with raisins. She shape them oblong so we could tell the difference. These were my favorite because the raisins would plump and you’d have the salty and sweet.

When I make my polpette, I usually do about 50% pork, 35% lamb or veal, and the rest with beef, the lamb gives them such a rich flavor, it’s such a treat, I’ve been baking them because I’m trying to be a little health conscious, but sometimes I have to just fry them, nothing like it. This was a great video, I think the part about adding the bread was so good to show, a lot of people use bread crumbs and think it’s great, but it doesn’t capture what what the bread does for them, thanks for sharing this, it brings a lot to the table for people that don’t know 🇮🇹😎🇮🇹
So how long (minutes or hours) do you keep the meatballs in the sauce or gravy as I call it. 😃 I don’t like raw meat. Plus I’ve never cooked them that way. I’d love to try.

My mom puts some meatball mix in the microwave to cook it to test the seasoning before forming them into balls. They don’t taste as good coming out of the microwave but it’s a good way to see if you need anything else.
I made the Biancamanginer…that while light lemon custard in the square molds for a fancy dinner party last night – a HUGE HIT!!

The modern day meatball comes from Italian Americans, not Italy. Polpette is very different and the meatballs without all that other junk are copied from what immigrants made. In the new world, we had our industrial revolution already so ground beef became readily available. The all beef, or mostly beef meatball is American. Because when you already have sausage, why mix the meat? Our Sunday gravy has sausage, pork, short ribs, meatballs, and pork & beef braciole, so it was too much. Italians, however, always add pork if they're off the boat.
And many of us also fry our meatballs. This fried, all beef meatball is what is known today throughout the world. Polpette, before the American version, had currants and other items not found in the recipe anywhere in the world today.

I grew up spreading meatballs in bread. Usually from Sunday’s dinner. Meatballs are my favorite.
Since italian and spanish cuisines are so similar, You should try our "albóndigas" and compare them. Same (or similar) ingredients, different ways of cooking…Completely different result hahahaha. It would be a great video!!!!

I made this tonight! I made some pasta to go with it. I sautéed pasta in the pan gravy leftover from the meatballs. ….soooo good.
i love this channel, though i know my attempts at making italian food would repulse eva. Such as today when I made a pizza. I put the tomato paste on the pizza dough and the mozarella, then realized i forgot to add the spices, I simply sprinkled the spices on top of the mozarella, Once in the oven it all came together, well, maybe not, but I wasnt complaining, it was still a pizza.
In New Zealand flattened meatballs are called "rissoles", with or without a coating of breadcrumbs. I believe the term comes from Italian from Latin russeolus, via French cuisine.
Meatballs hands down are my favorite food to make and eat. They are little balls of goodness.
