Everyone loves a good, creamy risotto! Today I tried a new one using radicchio and red wine, with pancetta, rosemary and thyme. I used shallot and butter which is traditional but rather than using cheese, I tried using fresh ricotta to “mantecare” the risotto – that is the Italian term which describes the adding of fat in the form of butter or oil and cheese once the heat has been turned off and then stirring vigorously to create a creamy consistency.
